Yes, you read that correctly. Apparently, this is a favorite way to make fried rice in Hong Kong.
Basically, you just make the fried rice as usual, then squirt a generous amount of ketchup into the rice, mix and allow the heat to caramelize the sugars in the ketchup. I love it!
The color is lovely and the caramelized ketchup lends a savory tang to the rice. But don’t take my word for it….
try it both ways and see which one you like better or maybe you’ll love both like I do.
