After I stopped eating dairy cheese as part of switching to a mostly plant based way of eating, I really thought the thing I would miss most would be Mozzarella cheese on pizza. Because, you know, that’s what I was used to and was always told that pizza just wasn’t pizza without that layer of gooey, melted cheese on top.
Turns out that was wrong!
Here’s what I do and I’m telling you the truth here. I really do not miss pizza cheese. At all.
Sometimes I make my own pizza dough but most of the time I buy it pre-made in bags of two and throw one in the freezer. Personally I like Publix bakery fresh pizza dough but I think that most grocery stores that are large enough to have a bakery area likely sell it.
I take it out of the fridge about an hour before I’m going to make my pizza because it’s easier to roll out. Just roll out the dough and place it on a baking sheet sprayed with cooking spray.
Then spoon on your sauce and spread the sauce out in an even layer over the dough.I like to place cooked mushrooms on top and then bake for twenty minutes in a 400 degree oven or until the crust is brown on the edges.
I remove it from the oven, slice it up and then for my slices, I spread on a layer of refried black beans and then top with sliced avocado, red pepper flakes, my homemade plant based taco meat and a generous sprinkling of sea salt. Talk about filling!
This is a nutritious, delicious, completely satisfying meal. No cheese needed. Let’s eat y’all…!
